Everyone knows the story. In 1853, at Moon's Lake House in Saratoga Springs, a cook named George Crum answered a complaining customer by slicing potatoes paper-thin and frying them hard. The delighted customer, the legend says, was Cornelius Vanderbilt, and the potato chip was born in a flash of kitchen revenge.
It is a great story. It also has a problem. Vanderbilt spent the summer of 1853 touring Europe with his family, which puts a serious hole in the famous restaurant scene.
And there is an earlier report. In 1849, four years before the supposed invention, the New York Herald praised a Saratoga cook named Eliza for her potato frying. The report describes her reputation; it does not establish that she invented the chip. But it shows thin fried potatoes were already known in Saratoga before Crum's legendary moment.
So what did Crum do? He helped popularize the snack. His "Saratoga chips" became famous, and he later opened his own restaurant. That is different from proving he was the first person to make them. The evidence leaves the original inventor uncertain; a memorable restaurant legend gives us a neat answer that the history does not.
