You are standing on platform 2 with a coffee going lukewarm in your hand. The 8:03 is late by four minutes, which is nothing, and you are glad of it, because you are reading a message.
Hi! Is the Smoked Habanero coming back? The shop page says sold out and I wanted it for my brother's birthday.
Sold out. You read the words twice.
It can't be. You sent a batch to the post office on Wednesday. You remember the weight of the box. But you also remember how fast the last twenty jars went at the weekend market, and the six online orders on Thursday night, and the small voice that said check the shelf, and then the Friday that swallowed everything.
Let's call the person in this scene Mara. She makes hot sauce in a rented kitchen unit, and she is made up, a picture of something that happens to many people who sell what they make. Maybe it has happened to you.
The sentence that stings
What hurts is not the empty shelf. Shelves empty. That is what selling looks like.
What hurts is that a stranger told you. Your best seller, the one that pays for the rest, had been gone for days. Nobody was angry. Somebody was just politely waiting for a thing you could not give them, while you thought everything was fine.
The train arrives. You find a seat by the window and type a reply. So sorry, it's out right now, I'll let you know. Delete. Thanks for asking, I'm restocking soon. Delete. Soon is a promise you can't see the end of. You don't know how many bottles are left of the others, or how many jars of the habanero sit in the unit, or whether the chillies were ordered at all.
You know roughly. You always know roughly.
What roughly costs
Roughly is a notebook with three different handwritings, all yours. It is a spreadsheet you last opened in September. It is counting jars on a shelf with your lips moving, then forgetting the number by the time you reach the laptop.
Roughly costs you in quiet ways. A weekend when you could have rested, spent making a rush batch because you ran out of the one thing everyone wants. A supplier who says three weeks when you needed one. Cash tied up in a crate of a flavour nobody asked for, sitting at the back like a guest who stayed too long.
It also costs you a certain feeling. You run a real business, with real customers and a real sign on the unit door. And some mornings you find out how it is doing from a message on your phone.
That is the part nobody says out loud. You feel a bit like a fraud, and not because you aren't working hard. You are, harder than anyone sees. It is because the shop is running a few steps ahead of you, and you keep catching up in public.
The kitchen, 9:15
You get to the unit and put the kettle on before you do anything else, because your hands need a job.
Then you count. Not just the habanero. Everything. Jars, caps, labels, the box of chillies by the door. You write the numbers on the back of an envelope, because the envelope is what you have.
It takes forty minutes. At the end you know exactly where you stand, and the strange thing is that it feels better. Nothing has changed except that the fog is gone. Two flavours are fine. One is low. The habanero is at zero, and has been since Thursday.
You reply to your customer properly this time, with a real date and a real apology, and a small note that you'll message when it's back. It is a good reply. But you can't shake the thought that you only got to write it because someone asked.
The turn
What if you never had to be asked?
Not a bigger system, not a software subscription with forty menus. Just one quiet place where the count lives, with a number next to each product that says this much is left, and a gentle flag that says this is getting low, and here is when you wanted to reorder. A place you glance at with your Monday coffee, and then forget about, because it is looking after the remembering for you.
That is all it is. The envelope, grown up a little.
An ordinary Monday, later
Picture the same platform some weeks on. Same coffee, same slightly late train.
Your phone buzzes with a message from a customer. This time it is a photo of a bottle on their kitchen table and the words this is unreal on eggs.
You smile. You haven't opened the spreadsheet yet this morning, but you did on Friday, for two minutes, and you know without checking that the habanero is fine. The chillies are on order. The labels are in. The one flavour that was running low got its flag days ago, and you dealt with it between two other tasks, with no weekend rush and no apology.
The shelf stopped surprising you.
It is a small change, and you feel it in odd places. In how you answer when someone at the market asks, do you have the big jars? You say yes, or no, or Thursday, and you say it like someone who knows. In the Sunday evening that is just a Sunday evening.
If this sounds like your shelf
If you recognised yourself on that platform, you might like to look at the Never Sold Out by Surprise – Inventory & Reorder Tracker. It is an Excel workbook with reorder alerts, stock value and a simple dashboard. It comes as a sample version to explore and a blank template for your own products, plus a short PDF guide. There is no subscription, and a 30-day money-back promise: if it doesn't help, you get a full refund, no questions.
You don't have to do anything today. But the next time a customer asks if something is coming back, you could already know the answer.
